M4A for quality, MP3 for maximum device compatibility.
M4A is the audio exactly as it exists inside the video: AAC, untouched. It is the better-sounding option and the one to pick if the destination accepts it — which, these days, most things do.
MP3 is offered because compatibility with older hardware is still a real requirement. Car head units, gym equipment, DJ controllers and older MP3 players sometimes take MP3 and nothing else. It involves one re-encode from the AAC source, so it is very slightly lossier.

The audio is only as good as the recording in the post. A phone microphone at a loud gig produces a distorted track, and extracting it cleanly still leaves it distorted — separating audio from video cannot repair what was captured badly.
Timeline audio typically sits around 128 kbps AAC. That is fine for speech and acceptable for music; it is not a master, and no processing on our side would make it one.
